Soup One

I love to make soup, especially in the winter and although I am not much of a cook I find that I have a knack for throwing soup together.

Today's recipe:

Lentil Soup

500g Red Lentils
2 large leeks
8 medium grated carrots
3 chicken stock cubes
1 medium onion
1 1/2 pints of boiling water

Now, most people in my family like to boiling the lentils and carrots first, but I am a little impatient and for those who don't have a lot of time, I think you'll like my version.

First, boiling the water and add it to your soup pot along with the 3 stock cubes and 500g of lentils.
Then, wash all the carrots and leeks, top-and-tailing them. Get out your trusty grater (or bender) and shred the carrots on your chopping board. Add these to the pot to save on dishes.
Using the same chopping board roughly cut your onion and leeks, then throw them in the pot too.

Now, let it all boiling of a few minutes on the stove and reduce to a simmer for about 30mins. This is to ensure all the veg is cooked through. Once pipping hot turn off the heat and serve. Leave the soup to cool in the bowl for several minutes before attempting to eat it! Whilst your waiting grab a few slices of thick bread and butter them.

When ready, grab your bowl, spoon and bread and enjoy! (Don't forget to dunk your buttered bread in the soup>
